For the Patties:

  • 3 cups grated zucchini (~2 medium, squeezed dry)

  • 1 egg

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (or almond flour for gluten-free)

  • 2 garlic cloves, minced

  • 2 tbsp fresh parsley or dill, chopped

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp olive oil (for frying)

For Serving (Optional):

  • Tzatziki, sour cream, or marinara sauce

  • Lemon wedges

  • Fresh greens

Step-by-Step Instructions

1. Prep the Zucchini

  1. Grate zucchini and place in a clean kitchen towel.

  2. Squeeze out as much liquid as possible (key for crispy patties!).

2. Mix the Batter

  1. In a bowl, combine zucchini, egg, Parmesan, breadcrumbs, garlic, herbs, salt, and pepper.

  2. Stir until well mixed (if too wet, add 1-2 tbsp more breadcrumbs).
