A perfect breakfast, dessert, or side dish with dinner is the healthy “pumpkin muffins” since they taste amazing and yet manage to slip in some extra veggies. Keep these two things on hand, and you never know when a mood will hit baking or muffin!
Yeah, you heard it correctly. Two ingredients: no eggs, no butter, and no oil, and only five minutes of preparation!
– A medium box.Of-spice CakeMix-.
– One can.Of [15oz] Of pumpkin puree.
– 1/2 C.Of raisins or chopped nuts, if desired.
Step 1- Spray twelve muffin cups with a non-stick cooking spray.
Step 2- Blend the pumpkin puree with the dry cake mix.
But don’t add any of the other requested ingredients to the box.
Step 3- First of all, I like to fold the batter with a spatula, and then I use an electric mixer to make sure it’s smooth and properly mixed. Much of this you can do by hand, it only takes a little longer.
Step 4- Divide the batter equally between the 12 regular cups of muffins. Bake for 20 minutes at 375 degrees F.
