Ingredients
6 slices bacon, diced
1 medium onion, diced
3 cloves garlic, minced
4 large russet potatoes, peeled and diced
4 cups chicken broth(or vegetable broth)
1 cup heavy cream(or half-and-half)
1/2 cup sour cream
1 cup shredded cheddar cheese
2 tablespoons unsalted butter
1/4 cup all-purpose flour(optional, for thickening)
Salt and black pepper, to taste
1/4 teaspoon smoked paprika(optional)
1/4 teaspoon cayenne pepper(optional, for a spicy kick)
For Garnish:
Extra shredded cheddar cheese
Chopped green onions
Crumbled bacon
Instructions
Step 1: Cook the Bacon
In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy.
Remove the bacon with a slotted spoon and set aside. Leave about 2 tablespoons of bacon grease in the pot (drain the rest if there’s too much).
