Ingredients
1 medium cabbage, shredded or thinly sliced
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
1 large carrot, grated
1 red bell pepper, diced
1 (14 oz) can diced tomatoes, with juices
1 teaspoon smoked paprika(optional)
1 teaspoon cumin
1/2 teaspoon chili powder(optional, for heat)
Salt and black pepper, to taste
1/4 cup fresh parsley, chopped (for garnish)
Juice of 1/2 lemon
Instructions
Step 1: Sauté the Vegetables
Heat olive oil in a large skillet or pot over medium heat.
Add the onion and sauté for 2–3 minutes until softened.
Stir in the garlic, carrot, and bell pepper, and cook for another 2–3 minutes, until fragrant and slightly tender.
Step 2: Add the Cabbage
Add the shredded cabbage to the skillet.
