Ingredients

For the Salad

  • 4 medium apples (Granny Smith, Honeycrisp, or a mix for balance of sweetness and tartness), diced
  • 1 cup red grapes, halved
  • 1/2 cup chopped celery (optional, for added crunch)
  • 1/4 cup chopped pecans or walnuts (toasted for extra flavor)
  • 1/4 cup dried cranberries or raisins

For the Dressing

  • 1/2 cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon lemon juice (prevents browning and adds brightness)
  • 1 teaspoon vanilla extract (optional, for subtle sweetness)

Optional Add-Ins

  • 1/2 cup crumbled blue cheese or feta (for savory flair)
  • 1/4 cup shredded coconut (unsweetened or toasted)
  • A sprinkle of cinnamon for warmth

Instructions

Step 1: Prepare the Apples

  1. Wash, core, and dice the apples into bite-sized pieces. Place them in a large mixing bowl.
  2. Toss the apples with 1 tablespoon of lemon juice immediately to prevent oxidation and browning.

Step 2: Assemble the Salad

  1. Add the halved grapes, chopped celery (if using), pecans or walnuts, and dried cranberries to the bowl with the apples.
  2. Mix gently to combine all ingredients without bruising the fruit.

Step 3: Make the Dressing

  1. In a small bowl, whisk together the mayonnaise, honey, remaining lemon juice, and vanilla extract until smooth and creamy.
  2. Pour the dressing over the salad and toss gently to coat evenly.
