Ingredients

For the Fruit Filling

  • 4 cups chopped fresh or frozen fruit (cherries, peaches, mixed berries, apples, etc.)
  • ½ cup granulated sugar (adjust based on sweetness of fruit)
  • 1 tablespoon cornstarch (or flour for thickening)
  • 1 teaspoon lemon juice (optional, for brightness)
  • 1 teaspoon vanilla extract (optional)

For the Topping

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar (or a mix of sugar and brown sugar for depth)
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon (optional, for warmth)
  • Pinch of salt
  • ¾ cup milk (whole milk or buttermilk for richness)
  • ½ cup melted unsalted butter

Instructions

Step 1: Prepare the Fruit Filling

  1. Preheat your oven to 375°F (190°C). Grease an 8x8-inch or 9x9-inch baking dish.
  2. In a mixing bowl, toss the chopped fruit with sugar, cornstarch, lemon juice, and vanilla extract. Stir until the fruit is evenly coated.
  3. Pour the fruit mixture into the prepared baking dish, spreading it out evenly.

Step 2: Make the Topping

  1. In another mixing bowl, whisk together the flour, sugar, baking powder, cinnamon (if using), and salt.
  2. Add the milk and melted butter to the dry ingredients. Stir just until combined—the batter should be lumpy but pourable.

Step 3: Assemble the Cobbler

  1. Drop spoonfuls of the batter over the fruit filling, spacing them apart slightly. The batter will spread during baking.
  2. Don’t worry about covering all the fruit; some exposed fruit adds nice caramelization and flavor.
