For the Biscuits

  • 2 cups all-purpose flour (or self-rising flour for extra convenience)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup grated sharp cheddar cheese (or your favorite melty cheese)
  • ½ cup diced cooked ham (deli ham or leftover baked ham works great)
  • ¾ cup cold unsalted butter, cubed
  • ¾ cup buttermilk (or milk with a splash of vinegar for tanginess)

For the Butter Swim

  • ¼ cup unsalted butter, melted
  • 1 tablespoon garlic powder (optional, for added depth)
  • Freshly ground black pepper, to taste

  • Fresh parsley, chopped
  • Dijon mustard (for dipping)

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 400°F (200°C). Grease a deep cast-iron skillet or large baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.

Step 2: Make the Dough

  1. Add the cubed cold butter to the dry ingredients and use a pastry cutter or your fingers to work it into the mixture until it resembles coarse crumbs.
  2. Stir in the grated cheddar cheese and diced ham until evenly distributed.
  3. Gradually add the buttermilk, stirring just until the dough comes together. Be careful not to overmix—lumps are okay!

Step 3: Form the Biscuits

  1. Drop spoonfuls of the dough into the prepared skillet or baking dish, leaving about 1 inch of space between each biscuit.
  2. Pour the melted butter evenly over the tops of the biscuits, ensuring some drips down into the pan. This creates the "butter swim."

Step 4: Bake

  1. Place the skillet in the preheated oven and bake for 18–22 minutes, or until the biscuits are golden brown and puffy.
  2. If using garlic powder, sprinkle it over the melted butter during the last 5 minutes of baking for enhanced flavor.
