Ingredients

For the Cake

  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup fresh pineapple juice (reserve some for drizzling later)
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lime (optional, for extra brightness)

For the Glaze (Optional)

  • ¼ cup reserved pineapple juice
  • ½ cup powdered sugar
  • 1 tablespoon lime juice

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan or a round 9-inch cake pan with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

Step 3: Combine Wet Ingredients

  1. In a separate large mixing bowl, whisk together the pineapple juice, vegetable oil, eggs, vanilla extract, and lime zest (if using) until smooth and well combined.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture in three parts, stirring gently after each addition until just combined. Be careful not to overmix—this ensures a tender crumb.
  2. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 5: Bake

  1. Place the pan in the preheated oven and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 6: Make the Glaze (Optional)

  1. In a small bowl, whisk together the reserved pineapple juice, powdered sugar, and lime juice until smooth. Adjust sweetness by adding more powdered sugar if needed.
  2. Once the cake has cooled, drizzle the glaze over the top in a decorative pattern. Let the glaze set slightly before slicing.
