Rhubarb butter is a delightful way to enjoy the tart, refreshing taste of rhubarb. This simple spread pairs beautifully with toast, pancakes, yogurt, or as a swirl in desserts. Its vibrant color and bright flavor make it a perfect addition to any breakfast or snack. Best of all, it's easy to make at home using just a few ingredients!

Ingredients

  • 4 cups chopped fresh rhubarb (about 1 lb)
  • 1 cup granulated sugar (adjust based on sweetness preference)
  • ¼ cup water
  • 1 teaspoon lemon juice (optional, for extra brightness)
  • Pinch of salt

Instructions

Step 1: Prepare the Rhubarb

  1. Wash and chop the rhubarb into small pieces (about ½-inch chunks). This helps it break down more easily during cooking.
  2. In a medium saucepan, combine the chopped rhubarb, sugar, water, lemon juice (if using), and salt.

Step 2: Cook the Mixture

  1. Stir the mixture over medium heat until the sugar dissolves and the rhubarb begins to soften (about 5 minutes).
  2. Reduce the heat to low and simmer gently, stirring occasionally, for 20–25 minutes. The mixture will thicken as the liquid reduces and the rhubarb breaks down.
  3. Use a potato masher or fork to mash the rhubarb slightly for a chunky texture, or blend it smooth with an immersion blender for a silky spread.

Step 3: Cool and Store

  1. Remove the rhubarb butter from the heat and let it cool to room temperature. Taste and adjust sweetness by adding more sugar if desired.
  2. Transfer the butter to clean jars or containers and refrigerate. It will keep for up to 2 weeks in the fridge or can be frozen for longer storage.

Tips for Success

  • Sweetness Level : Depending on how tart your rhubarb is, you may need to adjust the amount of sugar. Start with less and add more as needed.
