- 1 tablespoon apple cider vinegar (or lemon juice)
- Salt and pepper, to taste
For the Sauce
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon sugar (to balance acidity, optional)
- 1 cup beef broth (or water for a lighter version)
- 1 bay leaf (remove before serving)
For Serving
- Cooked rice, egg noodles, or mashed potatoes (optional, for serving)
Instructions
Step 1: Prepare the Ground Beef
- In a large skillet, brown the ground beef over medium-high heat until no longer pink, breaking it up into small pieces as it cooks.
- Add the chopped onion and garlic to the skillet during the last few minutes of cooking. Cook until the onions are translucent.
- Stir in the paprika, oregano, cumin, salt, and pepper. Cook for 1–2 minutes to toast the spices, then remove the beef mixture from the skillet and set aside.
Step 2: Sauté the Cabbage
- In the same skillet, add the olive oil and sauté the shredded cabbage over medium heat until it wilts and becomes tender (about 5–7 minutes).
- Splash in the apple cider vinegar or lemon juice, season with salt and pepper, and stir well. Remove the skillet from heat and set aside.
Step 3: Make the Tomato Sauce
- In a mixing bowl, combine the crushed tomatoes, tomato paste, sugar (if using), beef broth, and bay leaf. Whisk until smooth.
- Taste and adjust seasoning if needed.
Step 4: Assemble the Bake
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Spread half of the cabbage mixture evenly across the bottom of the dish.
- Top the cabbage with the cooked ground beef mixture, spreading it out in an even layer.
- Pour the tomato sauce over the beef, making sure everything is coated.
- Finish by topping with the remaining cabbage layer.
