Broccoli, Rice, Chicken and Cheese Casserole



This chicken and broccoli rice casserole is made in one bowl and it is ready in just 30 minutes. It’s cheesy, comforting, full of broccoli and easy to prepare!

I wanted to share with you another favorite recipe in one bowl of mine. It contains rice, chicken, cheese, and some broccoli.  This chicken and rice dish is so delicious and is a popular recipe on the blog.

Chicken and rice! Who does not like a good chicken dish and rice casserole. But the beauty here is that it is made in one skillet, it is quick and before you know that the dinner is ready to be served.


My favorite part of this casserole is the cheese and I like to put the pan under the broiler for a minute or so until the cheese melts and begins to form bubbles. Simple, fast and pure comfort food. This cannot be overcome.


* Ingredients


° 1 pound shredded chicken

° 2 c. Instant rice

° 2 c chicken broth

° 1 can of onion cream soup


° 1 can of cream of chicken soup

° ¼ c. Unsalted butter

° 8 oz. Velveta cheese food

° ½ c. Heavy whipping cream


° ¼ c. the milk

° 1 bag of frozen broccoli

° Panko bread crumbs (optional)


* Instructions :


Preheat oven to 350 degrees.

Cook broccoli as directed in the microwave and strain it.

Put 2 cups of chicken broth in a saucepan on the stove over high heat and bring to a boil.

Add rice to boiling chicken broth, remove from heat, cover and leave for 5 minutes.

Stir butter and velveta with cooked rice in a saucepan.

In a large bowl, combine grated chicken and cooked broccoli.

Add the rice cheese mixture to a mixing bowl.

Place soup, milk and heavy whipping cream into a mixing bowl. Turn everything together perfectly.

Put the mixture in a well-greased 9×13 baking dish.

Place panko bread crumbs on it if desired.

Bake for 25-30 minutes until browned and bubbles
