Oh so yummy…My mom’s fave Divinity Candy !! Just made this and turned out just like my Grandmas…My whole household loved loved loved. Yep, will be on our table every Christmas now!
– 2 to 1/2 cups sugar
– 1 cup of water
– 1 cup of light corn syrup
– ¼ teaspoon of salt
– 2 egg whites
– 1 teaspoon of vanilla extract
– 1 cup chopped pecans, toasted
– Toasted pecan halves for decoration
STEP 1 :
On low heat, cooking 4 ingredients in a heavy 2 quart saucepan for 16 minutes, or until sugar melted also a candy thermometer. And please remove syrup blending from heat.
Using an electric mixer, whisk egg whites at tall speed until stiff peaks create then immediately pour half hot syrup in slim stream on egg whites, beating persistently at high speed, about 6 minutes.
Okay now, you can cook rest half syrup on medium heat, stirring, for 5 to 6 min, or until a candy thermometer. Once finished, heavily pour hot syrup & vanilla extract on egg white blending, whisking ever at high speed until mixture holds its form. Next, stir in 1 cup ground pecans.
Finally, make sure to fall mixture rapidly by rounded tea spoonfuls to softly greased wax paper. If desired, decorate. Let cool and serve.
