Ingredients

For the Main Dish

  • 1 large head of green cabbage (about 2 lbs), cored and shredded
  • 4 medium potatoes (russet or Yukon Gold), peeled and cubed
  • 1 lb smoked sausage (kielbasa, andouille, or your favorite variety), sliced into bite-sized pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth (or vegetable broth for vegetarian option)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon caraway seeds (optional, for authentic flavor)
  • Salt and freshly ground black pepper, to taste

Optional Garnishes

  • Fresh parsley, chopped
  • Sour cream or plain Greek yogurt (for serving)
  • Dijon mustard (for drizzling)

Instructions

Step 1: Prep the Ingredients

  1. Shred the cabbage by hand or using a knife. Cut the potatoes into bite-sized cubes and slice the smoked sausage into rounds.
  2. Dice the onion and mince the garlic.

Step 2: Layer in the Slow Cooker

  1. Place the shredded cabbage at the bottom of the slow cooker. This helps prevent the potatoes from sticking to the base.
  2. Add the cubed potatoes, diced onion, and minced garlic on top of the cabbage.
  3. Pour the chicken broth over the vegetables, ensuring everything is lightly coated but not submerged.

Step 3: Season and Add Sausage

  1. Sprinkle the dried thyme, paprika, caraway seeds (if using), salt, and pepper evenly over the vegetables.
  2. Arrange the sliced smoked sausage on top of the layers.

Step 4: Cook

  1. Cover the slow cooker and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the potatoes are tender and the cabbage is soft but still slightly crisp.
  2. If desired, stir halfway through cooking to ensure even distribution of flavors.

Step 5: Serve

  1. Before serving, taste and adjust seasoning if needed. Ladle the mixture into bowls, garnishing with fresh parsley if desired.
  2. Offer sour cream, Greek yogurt, or Dijon mustard on the side for extra richness.
