*Ingredients :
°Brown sugar/cinnamon mixture:
°1/3 cup light brown sugar
°1 teaspoon ground cinnamon
°Piece of bread
°2/3 cup white sugar
°1/2 cup soft butter
°2 eggs
°1 1/2 teaspoons vanilla extract
°1 1/2 cups all-purpose flour
°1 3/4 teaspoon baking powder
°1/2 cup milk or almond milk
°2 apples of any kind, peeled and chopped and tossed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
°old cream frosting
°1/2 cup powdered sugar
°1-3 tablespoons milk or cream - depending on desired thickness of icing
*Directions :
Preheat the oven to 350 degrees. Use a 9" x 5" loaf pan and spray with nonstick spray or line with foil and spray with nonstick spray for easy release for slicing.
Combine brown sugar and cinnamon in a bowl. sit sideways.
In another medium bowl, beat the white sugar and butter together using an electric mixer until smooth and creamy.
Beat eggs, 1 at a time, until blended; Add the vanilla extract.
Combine flour with baking powder and whisk together in another bowl and add to creamed butter mixture and stir until combined.
Stir milk into mixture until smooth.
Pour half the mixture into prepared loaf pan; Add half of the chopped apple mixture.
Sprinkle 1/2 of the brown sugar/cinnamon mixture you set aside earlier, over the apple layer.
Pour remaining mixture over apple layer and top with remaining chopped apples, then remaining brown sugar/cinnamon mixture.
Add the apples to the mixture. Scrape the brown sugar mixture into the apples using a knife or spoon.
Bake in preheated oven until toothpick inserted in center of bread comes out clean, about 50 to 60 minutes.
To make the frosting, mix powdered sugar and milk or cream together until well blended.
Leave to cool for 15 minutes before frosting.
