Yum Yum Arizona Sunshine Lemon Pie


 

Don't freeze the pie crust; make your own instead. Put on a baking sheet.

Warm the oven up to 350 degrees.


First, wash your lemon. Then, cut it up and take out all the seeds. (Don't peel it; the whole lemon will blend!) Add to your high-powder blender (like a Vitamix).

Cream the butter and add the eggs, vanilla, and sugar. Mix until it's smooth. I began with power 5 and then went up to 10.

Place the mix in your pie crust. Place in the oven and bake for 40 minutes, or until set.

Let it cool down, then put it in the fridge to get cold.


Topping for the cake:

It will take about 20 minutes for the bowl and beaters to freeze. Put in your sugar and whipped cream. Whip until peaks appear.


Cut the pie into pieces and serve it cold with whipped cream on top. You can eat this warm (it won't be as hard) or at room temperature, but we liked it best when it was cold.
