Baked Cream Cheese Chicken Taquitos

These Baked Cream Cheese Chicken Taquitos are the perfect appetizer or snack that combines tender chicken, creamy cheese, and zesty seasonings—all wrapped up in crispy tortillas. Best of all, they're baked instead of fried, making them healthier without sacrificing any flavor or crunch!


Ingredients

For the Filling

  • 1 cup cooked and shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/4 cup salsa (mild or hot, depending on your preference)
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

For Assembly

  • 8 small flour tortillas (6-inch size works best)
  • 1 cup shredded Mexican blend cheese (or Monterey Jack and cheddar)
  • Cooking spray or olive oil spray

Optional Garnishes

  • Sour cream
  • Fresh cilantro, chopped
  • Sliced green onions
  • Diced tomatoes

Instructions

Step 1: Prepare the Filling

  1. In a medium mixing bowl, combine the shredded chicken, softened cream cheese, salsa, lime juice, chili powder, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated. The mixture should be creamy and spreadable.

Step 2: Assemble the Taquitos

  1. Lay out the flour tortillas on a clean surface.
  2. Spread about 2 tablespoons of the cream cheese-chicken mixture onto each tortilla, leaving a small border around the edges.
  3. Sprinkle about 1 tablespoon of shredded cheese over the filling for extra cheesiness.
  4. Roll the tortillas tightly around the filling, tucking in the sides as you go. Secure the ends by pressing gently.

Step 3: Bake

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Place the rolled taquitos seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray or brush with a little olive oil for added crispiness.
