Apple Cinnamon Bread


 

For the Bread:

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tbsp cinnamon

  • ½ cup unsalted butter, softened

  • ¾ cup brown sugar

  • 2 large eggs

  • ½ cup Greek yogurt or sour cream

  • 2 tsp vanilla extract

  • 2 cups diced apples (~2 medium, peeled)

For the Cinnamon Swirl:

  • ¼ cup sugar

  • 1 tsp cinnamon

For the Glaze (Optional):

  • ½ cup powdered sugar

  • 1–2 tbsp milk

  • ½ tsp vanilla extract

(Pro Tip: Add ½ cup chopped walnuts for crunch!)


Step-by-Step Instructions

1. Prep & Preheat

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

2. Make the Batter

  1. Whisk flour, baking soda, salt, and cinnamon in a bowl.

  2. In another bowl, beat butter and sugar until fluffy. Add eggs, yogurt, and vanilla.

  3. Fold in dry ingredients, then stir in apples.

3. Layer & Swirl

  1. Pour half the batter into the pan.

  2. Mix sugar and cinnamon, sprinkle half over the batter.

  3. Repeat layers, then swirl with a knife.

4. Bake & Cool

  1. Bake 50–60 minutes until a toothpick comes out clean.

  2. Cool 10 minutes in the pan, then transfer to a rack.

5. Glaze & Serve!

  1. Whisk powdered sugar, milk, and vanilla until smooth.

  2. Drizzle over cooled bread.
